Popcorn Beach Cake Recipe!
Life's a beach... So let's eat one!
The sun is shining.
It’s summer time... here’s a Beach inspired treat!
Makes | 1 large beach scene
Preparation time | 25 minutes
Assembling time | 30 minutes
Ingredients:
For the Sand:
375g slightly salted butter
750g of assorted biscuits (we used digestive and ginger biscuits)
For the vanilla cheesecake icing:
500g full-fat cream cheese
1 tbsp vanilla extract
200g icing sugar
300ml pot double cream
For decoration:
Popcorn Shed’s Gourmet Popcorn (choose flavour of choice)
Ice cream cones
Equipment:
Bucket and spades
Food processor
Electric whisk
Saucepan
Method
Gently heat the butter in a saucepan.
Put the biscuits into a food processor and pulse until you have fine, sand-like crumbs.
Add the butter and blitz again until well combined. Set aside while you make the cheesecake icing.
Whisk the cream cheese, vanilla extract and icing sugar until mixed well.
Now create your beach scene!
